Anil Chaat (Kandhla Wale) began its journey far from the city, in Kandhla, where recipes were passed down through generations rather than written in books. What started as a modest chaat stall grew on nothing but word of mouth — the crunch of a perfect golgappa, the balance of tangy and sweet in a plate of papdi chaat, and a family's insistence on doing it the old way, every single day.
